I borrowed it from someone's vegan recipe. YUM!
The original recipe:
Orange-Pumpkin Pancakes
1 cup whole wheat pastry flour
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon salt
3/4 cup orange juice
1/2 cup canned unsweetened pumpkin
1/4 cup canola oil
2 eggs
pure maple syrup, for serving
butter, for serving
What I did to the recipe:
1 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon cinnamon
1 1/2 teaspoons fresh nutmeg
3/4 cup Pumpkin Spice soymilk
1/2 cup canned unsweetened pumpkin
1/4 cup canola oil
2 egg replacers (I used flax)
maple syrup

Directions:
1. Combine dry ingredients in a large bowl.
2. Whisk together wet ingredients in a smaller bowl, stir into the flour mixture until you have a smooth batter
3. Meanwhile, heat a large griddle over medium to medium-high heat.
4. Spoon about 1/4 cup of batter for each pancake onto the griddle. Cook until the little bubbles form, then quickly flip the pancakes to the other side. Cook until just browned on the second side.
Yields 12 pancakes

I am not fond of pumpkin pie but I do love muffins or bread... MMMM!
