If you can't cook Corned Beef and Cabbage....

Then you can make this simple...

CORNED BEEF AND COLESLAW SANDWICH

2 tablespoons vinegar or pickle juice
1 1/2 tablespoons mustard plus additional for spreading on the bread
1 1/2 tablespoons horseradish or mayonaise
1/4 cup olive oil
3 cups coleslaw, get a bag from the grocery store
1 cup thinly sliced red onion (optional)
Any type of bread
corned beef, cold cut from grocery store

In a large bowl, mix together the vinegar or pickle juice, 1 1/2 tablespoons of the mustard, the horseradish or mayonaise, salt and pepper, the olive oil, and cole slaw.

Spread the bread with the additional mustard, arrange the coleslaw and the corned beef on the bottom bread, and fit the top bread on the filled bottom, pressing the loaf together firmly.

Serves 4.

actually corned beef and cabbage isn't Irish at all....it's Irish American.

My Asian roommates told me that the food they serve at the Chinese Resturant ain't really Asians food.

It probably isn't. It's "Americanized" Chinese food.

I did make once corned beef & boiled cabbage but my dh doesn't like irish food at all. Even altho, he is part of irish. That's why, this time I made ham, baked potatoes, and green salad w/ bread.

I'll stick with Ham, potatoes (depend on what kind), some kind of veggies and bread. Last year I was in Los Angeles, we went out to eat.

Here another way to make easy corned beef and cabbage.

Easy Corned Beef and Cabbage Recipe courtesy Paula Deen

Recipe Summary
Difficulty: Easy
Prep Time: 30 minutes
Cook Time: 12 minutes
Yield: 4 to 6 servings (If serving 6, use 2 cans corned beef)

4 slices bacon
4 tablespoons butter
1 head green cabbage, coarsely chopped
Salt and freshly ground pepper, to taste
1 can corned beef
file.ashx

Cook the bacon in large pot over medium heat until almost crisp. Remove the bacon from the pot and set aside. Melt the butter in the pot with the bacon grease. Add the cabbage, stirring well to coat the cabbage in fat. Add about 1/3 cup water, and salt and pepper, to taste. Cover pot with a lid, and cook over medium heat for about 10-15 minutes. Meanwhile, chop the bacon into small pieces.
Remove the lid from the pot, and scatter chunks of corned beef and chopped bacon over top of the cabbage. Cover and cook until desired doneness. I personally like a little bit of crunch left to the cabbage.

Tip: Cabbage is one of those vegetables that naturally contains water in its leaves. Begin by adding just a small amount of water. As cabbage cooks, if it needs more liquid, then add more water.

Cooked cabbage is what I do crave for once in awhile...without the corned beef--

Speaking of Hobo's dinners, I prefer doing those out on the grill--*smackin' mah lips*

Cabbage mixed w/carrots.. *fall down on the ground*(thud) tasty damn delcouisly veggies..

Rest of my family hate it.. aww just me.. *mumbling*

I cooked the canned corned beef and cabbage...
and it was toooo rich....
Load of calories and fat...
Cause it got butter and bacon grease...
Next time, I will use less butter and less bacon grease.
And less salt, cause the canned corned beef got a lot of sodium in it.

Later this week I will try to cook Hobo, that sound good.
