I'm having salmon with duxelles (mushroom paste) and sweated shallots in cream, carrots, rice and salad.
 
I would like the baked chili cheese dogs too. Alex! Basketball. Purdue is doing ok so far. Northern Iowa lost to George Mason last night.

1 package of your favorite weiners (we like turkey or all beef)
1 package of your favorite buns (If I dont do home baked we like whole wheat but white is more traditional)
Your favorite chili (my sons homemade venison chili is great but my husband likes canned... eh)
diced sweet vidalia or your favorite onion
optional - diced chile peppers such as mixed jalapeno and serrano
good cheddar cheese
ceramic or glass baking dish

Preheat oven to 350.

We boil the weiners to remove excess fat and to make them mild. While your weiners are boiling dice the onions and peppers. (if you use them)
If you use cheese, cut into long, thin slices or shred (Since you cant use cheese, you could just do this for the rest of your group)

Lightly spray or oil the baking dish so that your buns dont stick and get a crunchy crust.
Drain the weiners.
Place the weiners in the buns. Place them into the baking dish so that they slightly flare. You do not want them too crowded or too close.
Using a large spoon, slather the dogs with chili. No need to heat the chili. Think lasagna, you want them all coated evenly from pan side to pan side. If you are using cheese, add it now. If sliced, place it on each dog. If shredded, sprinkle it over all.
If you use onions and chiles sprinkle them evenly over all.

Bake on center rack of oven until your chili is very hot and your bun bottoms are crunchy and crisp. Be careful not to burn the bottoms - ewww.

Serve Southern style with cole slaw if you like it, we use a regular cabbage and carrot slaw recipe that has either lemon or vinegar along with a small amount of mayo, a small pinch of sugar, salt and pepper. The slaw should only have enough dressing to bind it. The sugar and salt will sweat the fresh cabbage, thinning the dressing. Note - some uninitiated folks will eat this along side the dogs, but true Southerners put the slaw ON the dog. lol

A fresh vegetable plate is traditionally offered that has really vine ripe tomato wedges, vidalia onion wedges, and celery stalks.

My kids like sweet jalapeno relish with theirs, must be a Texas thing.

You have messed up one pan, one baking pan, a spoon and a knife and made dinner for 4 to 8 people or 3 teenagers. lol since my son eats 4 of these. This whole thing usually takes us about 30 minutes, baking time included. I usually triple this recipe for our family dinners and it only adds another 15 minutes.
 
Thanks LDNanna!! That sounds great. I have a non-dairy shredded cheddar cheese that I can try this with. I can do my daughter's separate using Chili no beans.

Tonight, MIL is going to her weight loss group and so she & I will be going to Perkins. I think I will have the chef salad without cheese. The family is having a Marie Callander's Frozen Lasagna, Chicken spinach and mushroom, with cherry jello.

I added your recipe to my notepad of chili dog recipes, and we will make this one while my husband is on vacation this week.

Tonight, I am just have a whole wheat muffin with turkey sausage and egg. Orange juice and Lime Crush.

Tomorrow is Mexican restaurant and Thursday night will be a sushi dinner party with all the other people who live in the house. Friday is homemade pizza. I'm looking forward to some good eats for the rest of the week! Woo!

Taco pizza. Got two crusts in a pack so need to use both.
 
Sadly I have to cook. Not really in the mood for anything, just want to veg. We are having a ground beef throw-together.
