Quiche Lorraine (British recipe)

Ingredients

150g short crust or flaky pastry
75g – 100g lean bacon strips
75g – 100g gruyere cheese, sliced
3 eggs
seasoning
125ml singel cream or top of the milk

1. Grease the flan ring or sandwich tin
2. Roll out the pastry and line flan ring or sandwich tin. Strengthen the sides by making a double edge.
3. Fry bacon strips gently without extra fat until just cooked but not brown, arrange the bacon over the base of the flan case.
4. Arrange cheese slices over the bacon.
5. Lightly beat the eggs and seasoning, stir in teh cream & pour into the pastry case.
6. Bake towards the top of the oven until risen & golden brown.

Oven temperature: 200oC
Time: 30 – 45 mins.
Tin: 18cm (7in.) flan ring, or sandwich tin.

Fan oven: 150oC – 180oC
Less than 45 mins.

Quiche Lorraine (German recipe)

250g flour
½ teaspoon bake powder
salt
100g butter or margarine
100ml water
150g bacon
2 teaspoon green grated pepper
grated kümmel
grease for flan ring
200g Emmentaler cheese
4 eggs
400 ml sour cream, 10% fat
muskat

Knead with flour, salt, chopped butter & water together into dough.
Leave dough in the fridge for 30 minutes.
Sprinkle green pepper & Kümmel on the bacon strips & fry them then leave them until cool.
Grease the flan ring.
Roll out the pastry and line flan ring or sandwich tin. Strengthen the sides by making a double edge.
Arrange the cool bacon over the base of the flan case.
Arrange cheese slices over the bacon.
Lightly beat the eggs and sour cream, muskat, stir in teh cream & pour into the pastry case.
Bake towards the top of the oven until risen & golden brown.

Oven: 200oC & 25 minutes bake.

Zwiebelkuchen (Onion Pie)

PASTRY
250g self-raising flour
125g butter
1 egg
salt

FILLING
500g onions, chopped
200g slices bacon, diced
1 tablespoons butter
1/2 teaspoon caraway seeds
1/2 tablespoon flour
3 eggs, beaten
200g double cream
salt & pepper

1. Combine the flour & salt. dice the butter & rub into the flour until the mixture is the consistency of breadcrumbs. Add the egg & blend until the dough is pliable. Add the milk if the dough is not sufficiently moist.

2. Roll out the dough & press it into the bottom & sides of a round pie dish 28cm in diameter.

Filling
1. Saute the onions & bacon in thh butter until soft, then add the salt / caraway seeds. (can without salt, if you want to). First taste it before add the salt.

2. Remove from the heat & leave it until cold, then pour the onions mixture into the pastry-lined pie dish.

3. Add the beaten egg with double cream, then pour it on the onions mixture.

4. Bake until the pastry is golden & the filling is firm. Serve as a snack with white wine.

Oven heat to 190oC (37oF/Gas 5.)

Spinach Quiche. :)

1 package frozen spincach (about 10 oz. ), defrosted, all water drained
1 teasp. of salt
1 cup mozzarella cheese
1/2 teasp. pepper
1/2 cup romano cheese
1 unbaked pie crust- defrosted

Real easy to do. ;) Drain and squeeze the water out of the spinach. Beat the eggs. Dice up the mozzarella...and then add all the other ingredients and blend together. Bake at 350 degrees for 45 minutes.

Take out of the oven. Cut a piece. Enjoy. Repeat cycle if you run out too quickly. ;)

Squash Quiche

Another favorite quiche recipe from my kitchen to yours...

4 eggs
1 cup Bisquick
1/2 cup grated Parmesan cheese
1 1/2 lb. diced zucchini (approx. 2 zucchini)
1/3 cup oil
Pinch of oregano and parsley
1 small onion
(1/2lb mozzarella cheese - optional)

Mix all ingredients together. Grease the pie pan, bake at 350 degrees for 45 min. Deliciosa!

guess what, i just recently tried both...
I LOVE that Spinach quiche the BEST !
that's easy to do... i try to
eat more green vegetables so i just
got back home from a farmers market
a few blocks away they have everything
directly from about 20 different farms
nearby... i am not too fond of
eating any green vegetables, but i knew
they are good for us so i try to cook them
with something else if u know what i mean.
 
My bf and I made a quiche last night, we didn't use any pastry, we just used a simple quiche recipe, put it in an oven tray, and it tasted very nice.
 
Quiche Lorraine

1 frozen pie shell
4 strips of bacon
1 onion, thinly sliced
8 ounces of Swiss cheese, cut up in chunks
1/4 cup of Parmesan cheese
4 eggs, lightly beaten
1 cup of heavy cream
1 cup of milk
1/4 teaspoon of nutmeg
1/2 teaspoon of salt
1/4 teaspoon of pepper

Bake pie shell 5 minutes at 450ºF. Cook bacon. Take out. Pour off fat and cook onion until transparent. Crumble bacon put in shell. Put onion on top of bacon; Swiss cheese and Parmesan cheese next. Combine (mix) next 6 ingredients and pour on top of cheese in pie shell. Bake 15 minutes at 450ºF. Reduce to 350ºF. for another 10 minutes.
 
Chicken and Spinach Quiche

1 1/4 cups shredded cheddar cheese, divided
1 unbaked 9 inch pie shell
1 cup cooked chopped chicken
1 (10 ounces) package frozen chopped spinach, thawed and drained very well
1/2 cup chopped onions
3 eggs
3/4 cup milk
3/4 cup mayonnaise
salt and pepper

1. Evenly sprinkle 1/4 cup cheese onto the bottom of the pastry shell; set aside.
2. In a mixing bowl, add the chicken, 1/2 cup spinach, onion, and remaining cheese; stir to combine (this recipe only uses 1/2 cup spinach, so may save remaining for another use).
3. Spoon mixture into pastry shell; spread evenly.
4. In a bowl, add the eggs, milk, mayonnaise, salt and pepper; whisk to combine.
5. Pour over the chicken/spinach mixture.
6. Bake at 350° for 40-45 minutes or until knife comes out clean.
7. Let rest for 15 minutes before serving.
