I bought 2 coconuts...

I had to crack them open with a hammer.

At first I was scared of it... because I was afraid
maybe a rat or something might crawl out of it...

But anyway... I opened them... and one of them was bad... no juice came out and it was molded.

but the other one is good, got white inside and juice came out....
My mom told me I should have shake shake to see if coconut got
juice in it...

I don't understand why they call it coconut milk???
But the juice come out of it was clear like water.

I am having fun cooking stuff with coconut today...
very interesting. It is my first time.

I had Almond Joy and Coconut cake...
but I didn't know how to cook it.

Im a huge fan of Thai cuisine and this is one of dishes I often make.

COCONUT MILK:
2 1/2 cups desiccated coconut
3 cups milk

Combine the coconut with the milk in a heavy saucepan. Heat slowly, bring to a simmer, then remove from the heat and cool. Strain the milk, pressing down on the coconut meat to extract all the liquid. Squeeze all the coconut through a towel to get any last drops. Discard the coconut.

CHICKEN COCONUT SOUP:
4 stalks fresh lemongrass
4 cups chicken stock
15 quartersized slices fresh galanga, or fresh gingerroot
10 whole black peppercorns, crushed
3 serrano chiles, thinly sliced
12 fresh lime leaves (or scant 1/4 teaspoon grated lime zest)
2 cups coconut milk
1 whole chicken breast, boneless, skinless, cut into bite-size pieces
1 cup canned straw mushrooms, drained well
1/2 cup julienned snow peas
1/2 cup julienned carrots
2 tablespoons fish sauce
Juice of 2 limes
Fresh cilantro leaves, for garnish

Remove the grassy tops of the lemongrass, leaving stalks about 6 inches long, and cut off any hard root section. Using the blunt edge of a large knife or cleaver, bruise each stalk all over. Cut each stalk into 4 pieces.

In a saucepan bring chicken stock to a boil, reduce to a simmer, then add lemongrass, galanga, peppercorns, serrano chile, and lime leaves. Simmer 15 minutes, then add coconut milk and cook an additional 5 minutes. Add chicken pieces, straw mushrooms, snow peas, and carrots. Simmer for another 10 to 12 minutes. Stir in fish sauce, and lime juice and serve immediately. Garnish with cilantro leaves. Be careful to avoid chewing the lemongrass, galanga or ginger, or lime leaves when eating.

Yield: 6 servings

This is what I made today :applause:

Roasted Sweet Potatoes with Coconut Chive Sour Cream

6 small garnet yams
2 tablespoons canola oil
2 cups sour cream, light or regular
1/4 cup coconut milk, light or regular
1 cup unsweetened, shredded coconut, toasted
1/4 cup chives, chopped
1 lime, juiced

Preheat the oven to 400 degrees F.
Pierce each yam with a fork and lightly coat in oil. Cover in aluminum foil and bake until fork tender, about 30 minutes. Meanwhile, in a medium sized bowl, mix the sour cream, coconut milk, 3/4 cup of coconut, half of the chives and lime juice. Place mixture in refrigerator and chill until ready to use. When yams are cooked through, set aside until cool enough to handle. Remove foil, and cut each yam in half widthwise. Make 2 incisions at the rounded end of the yam to form an 'x' and spread open. Set the yam on its flat side, and top with a dollop of the coconut chive sour cream. Garnish with the remaining coconut and chives.
 
That is unusual for me but it sounds delicious. Will have to give that a try!

I also love coconut shrimp. Yummy!
 
LOL, I love coconut flesh and milk, they're hard to break open with a hammer, I struggled to break it open. I think I got the one that was rock hard.

Yeah I had a terrible migraine headache after I hit the first one...
it was hard as a rock... Had to hit it about 50 times.

but the second one, I only have to hit it 10 times.

Yeah my mom loves coconut and shrimp, but she doesn't like coconut shrimp.
She is strange.

I hate coconut!!! i dont like anything that has coconut or coconut flavorings in it EWW :barf: and neither does my sister same thing with me

I often baked cookies, sponge cakes and cream cakes with coconut but soup? It sounds interesting. I will try it.

I will be glad if you are interesting to have my cake and cookies recipes. I will add when I'm home from work.
 
These sound good to me and I will make some recipes of these. I love to eat coconut. Yummy!!!!!!!!!!
 
I'm allergic to coconuts and I'm not kidding about this, broke into hives other day by accidently ate cocnuts jelly beans. My tounge was swollen, hives on face and neck. My lips looked like I had colagen implants, my lips were huge and puffy. Ask Nozobo.... It was my faukt for not pay attention...*smh*
