Angel Hair with Basil & Tomatoes

Fresh basil and garlic bring out the Italian flavors in this simple quick-cooking dish.

4 ounces uncooked dried angel hair pasta (capellini), broken in half
1 teaspoon finely chopped fresh garlic
6 medium Roma tomatoes, coarsely chopped
1/4 cup chopped fresh basil leaves
2 tablespoons LAND O LAKES™ Fresh Buttery Taste™ Spread*
Freshly shredded Parmesan cheese, if desired

Cook pasta according to package directions. Drain. Keep warm.
Meanwhile, spray 10-inch nonstick skillet with no stick cooking spray; add garlic. Cook over medium heat 1 minute. Add tomatoes and basil. Continue cooking, stirring occasionally, until heated through (1 to 2 minutes).
Toss together hot pasta, tomato mixture and Fresh Buttery Taste™ Spread in large serving bowl. Sprinkle with cheese, if desired.
Makes 3 (1-cup) servings.

*Substitute 2 tablespoons LAND O LAKES® Light Butter.

TIP: Your favorite pasta can be substituted for angel hair pasta.

I’m definitely going to try this. We eat a lot of pasta because it’s cheap and fat free. The problem with pasta though, is that almost all pasta sauces are high in fat. I’m always looking for new ways to have pasta and get away from the fat at the same time. This recipe is excellent—it only calls for 2 tablespoons of fat, and I can probably cut that down to one.
