My favorite:

Spaghetti with meat sauce.

1 pound ground beef
1 tooth of garlic chopped
2 15 ounce cans of tomato sauce
1 tablespoon Spicy Spaghetti seasoning by Tone's
1 teaspoon sugar
1teaspoon salt

Put the tomato sauce and seasonings in a sauce pan on low heat. Then cook the ground beef and chopped garlic until brown.

Put the meat mixture in the sauce and simmer for an hour or two.

Then serve over any kind of pasta with grated Parmesan cheese.

This is easy , cheap, and tastes great.

Mamaws best fried chicken

1 cut up chicken

Soak the chicken in icy salt water for about 4 hours.

In a large bag or bowl, mix
1 cup flour
1 tsp garlic powder
1 tsp black pepper
2 tsp paprika
1/2 tsp celery salt
as much cayenne as you like.

Shake this really well.

Heat 2 inches of oil in a heavy iron skillet. Very hot, but never let it smoke - fire hazard!

Drain the chicken and pat it dry with clean tea towel or paper towel. Dip the chicken in
1 cup buttermilk.

Shake the chicken pieces in flour and lay them gently and carefully into the hot oil. Do not let the sides touch. Brown the chicken on both sides. Turn the heat down to low or medium low and cover the skillet with a heavy lid or weighted plate. Cook the chicken like this for about 15 to 20 minutes. Remove the lid and raise the heat to medium high and let the skin and breading get nice and crisp. Drain the chicken on a rack. Salt and pepper it or use a good seasoning salt that you like. Swans or McCormick is very good for this recipe. If you dont have that brand just use Old Bay.

This is a recipe that made our family restaurant very popular. Be sure to serve this with hot biscuits and cream gravy. Cole slaw is a popular salad with this recipe.

This is one of my favorites. I'm thinking I'll make it next month. I will leave out the ham because I can't afford Smithfield hams.

brunswick stew

2 (2 1/2 to 3 pound) chicken, cut into serving pieces
2 quarts hot water
2 t salt
1 to 2 of dried red pepper
several black peppercorns
1/2 pund cured, cooked ham (optional)
1 large onion,chopped
4 c diced peeled tomatoes or canned tomatoes
3 med white potatoes
4 c of fresh or frozen lima beans
2 c of fresh corn or frozen or cannned whole kernal corn
1 1/2 c of slived fresh or frozen orka

put chicken into water in a large pot; add salt, pepper, red pepper, quarted onion, and some celery leaves. Simmer for 2 hours till chicken is falling from the bones. Rmove chicken from pot, discard skin and bones and dice. Strain the broth. Return the chicken and broth to the pot; add ham (if using) and simmer untill he meat separtes into tiny pieces. chill in the fridge till the next day, then skim off the fat. Return to pot and alld all the vegetable but the okra. Simmer until tender; then add orka and cook 10 minutes longer. It freezes well.
