We need to drink with you one day.how about sample some Bushmills whiskey (irish) it is really good stuff, very smooth because they distill it 3 times, some says only irish does it 'to cheat', well that's bullshit, hell even the Lowlands part of Scotland did it, still does it, look at Auchentoshan, they make excellent Scots, I have a Three Wood, yum yum.
I'd say try the Bushmills Blackbush for it is an excellent example of how a nearly subtle sherry wood embody an incredible depths of flavouring and nuances to which the whiskey's structure is profound. In general, it is fantastic because while it is inexpensive, its puzzling why it should be so cheap but again its' popular so guess its follows the conventional demand/supply curve keeping the price point low. My personal favourite irish is Bushmills 10 year old. I also have a 21 year old hidden in store. The reason I suggested these is that these drams provokes drinkers to discover how smoothness and structure can integrate so well. Perhaps you could if you dare, do a triple distill and get famous in USA for that...so its a product aim as well as a marketing attempt to create a "Triple distilled in USA"...hmmm?
Bushmills 10 has great maltiness without being to brash as well it is quite fruity but not so acidy or flowery just i cant explain it you have to taste it (been a while since i had it last).
Bowmore 18 years old is also a bloody good one to get inspiration from (have a 12 and lots people liked it) but the 18 i had before (too expensive for me to get it now im broke) but not one person disliked or had lower opinion of the Bowmore 18 in fact every single older persons(freinds who are experienced (so they thought lol) said the Bowmore 18 is the best whisky they've ever had. Why? well you gotta taste it (and smell it) too

You know, I've often thought that bergamot would complement an Irish whiskey or scotch. It is the same herb as found in Earl Grey tea.
