" Summer Garden Omelet "


This should be easy to make and it pretty tastey.

Shopping list: Bell peppers, zucchini, american cheese, butter, onion, eggs, milk, salt and pepper.


Ingredients:

2 tablespoons butter

1/3 cup of chopped onion

1/4 cup of chopped green bell pepper

1/2 cup chopped zuchini

4 eggs

1/4 cup milk

1 teaspoon salt

1/4 teaspoon of pepper

2 slices of american cheese cut into 1/2 inch strips


Directions:

1. Melt butter in medium skillet over med heat, add onion, bell pepper and zucchini. Cook until vegetales are tender about 6 to 7 mintues.

2. Mix eggs, milk, salt and pepper in a small bowl. Beat the eggs with a fork until combined. Pour over the vegetables. Reduce heat to med-low. Cook without stirring, until edges are set about 2 mintues.

3. Cover skillet. Cook omelet until center is nearly set about 3 mintues. Arrange cheese strips on top of the eggs. Replace cover. Cook until cheese begins to melt about 1 mintues.

4. Slide omelet onto a serving plate, fold in half. Slice into 4 wedges.
