OLD FASHIONED BANANA CREAM PIE

1 pie crust (9 inch), baked
3 tablespoons cornstarch
1 2/3 cups water
14 ounces sweetened condensed milk
3 egg yolks, beaten
2 tablespoons butter
1 teaspoon vanilla extract
3 medium bananas
lemon juice
whipped cream

In heavy saucepan, dissolve cornstarch in water; stir in sweetened condensed milk and egg yolks. Cook and stir until thickened and bubbly.

Remove from heat; add butter and vanilla. Cool slightly. Slice 2 bananas; dip in lemon juice and drain. Arrange on bottom of prepared crust. Pour filling over bananas; cover. Chill 4 hours or until set.

Spread top with whipped cream. Slice remaining banana; dip in lemon juice, drain and garnish top of pie. Refrigerate leftovers.

....Didn't someone say 'banana cream pie'??? ooooOOOOO, now now, that's my favorite pie!! Never heard of dipping bananas in lemon juice--I sure can remember my Mom making banana cream pie just for me many times, although, instead of using whipped cream, she would have meringue, consisting of sugar and egg whites and put it back in the oven to just 'brown' the topping....Mmmmm...weren't those the goood o' days?!!!


Refrigerate leftovers??? Yeah right! Nah, I'd eat the WHOLE pie all by myself! *burps*....excuuuse me-- :D
 
yeah .. the reason i have to dipping bananas in lemon juice and drain it .. so bananas won't gettin rotten or taste funny as mushy you know or turn brown! :) .. it works as well , wink!!!

I'd figured that much and sounds like a good thing to do, but on the other hand, if I'm gonna eat it all up right away, there's no need for the lemon juice! :D
