CHICKEN WITH RICE (CUBAN)
1 whole chicken
1 lb. of rice
1 onion
1 c. cooking wine
1/2 tsp. salt
1/2 tsp. ground garlic
1/2 green pepper
1/4 c. olive oil
1/2 c. olives
2 bay leaves
Cut chicken into several portions and put it in a pot to cook for 3 minutes on a low flame. Slice the onion and green pepper and add it to the chicken with the wine, garlic, bay leaves, olives and salt. After 3 minutes add the rice and cover all the ingredients in pot with water. Let cook for at least 35 minutes then add olive oil. While cooking, make sure that you stir the rice frequently.

CUBAN BLACK BEANS AND RICE
2 c. dry black beans
2 tbsp. oil
3 tbsp. butter
1 chopped onion
2 cloves garlic, chopped
1 c. rice
6 c. water
Pinch of salt and pepper
Put beans in pressure cooker with 4 cups water and oil. Close and cook until control jiggles. Remove from heat, cool naturally, drain beans and set aside.
Cook onion in butter until translucent, add garlic and rice. Stir and cook for 5 minutes. Add 2 cups water and beans. Cover and cook on high until control jiggles, then lower heat and cook five minutes. Remove from heat, let sit 5 minutes, then run under cold water. Season to taste. Serves 4. May be doubled in a 6-8 quart cooker.

CUBAN CASSEROLE
1 med. onion, chopped
1/2 green pepper, chopped
1 lg. ham slice, diced
1 bay leaf
1/8 tsp. salt
2 tbsp. oil
1/2 c. black beans, cooked, drained
1 c. rice, cooked
Saute first 5 ingredients in oil in skillet. Combine mixture with beans and rice in large casserole; toss lightly. Cover. Bake at 350 degrees for 1/2 hour or until bubbly.

i only found 3 of cuban potluck recipes in my files.. since cuban ain't my fan to taste! so i hope that you able use those recipe!
