Holidays for Deaf - Advice needed

Hi all,
I'm a hearing person and recently met a BSL interpreter who opened my eyes to some of the barriers that must be faced by deaf people.
I found this particularly interesting because I am currently researching moving to the South of France with my family and want to set up a small holiday business down there. As you can imagine, the market is fairly competitive, so I have been trying to find an angle which will separate our business from it's competitors and it dawned on me after meeting the BSL interpreter that maybe we should aim to be able to offer a holiday experience not only for hearing people but also for HOH/deaf people.
I can but imagine that traveling as a deaf person, must not only take considerable courage, but must also carry restrictions in terms of what you can do, purely for reasons of communication barriers.
The South of France is a wonderful part of the world and is full of amazing things to do, see and taste and I would love to be able to offer a service where people could experience some of the wonderful things this part of the world has to offer. Our service could be used by our visitors as little or as much as required but in essence, we would be looking to offer facilities such as Sailing, Waterskiing / Wakeboarding , Kayaking, all types of Fishing, Mediterranean cookery, Art courses, Vineyard trips, Sightseeing tours and many other things.
I would be very interested to hear any comments or feedback that you can give me. I'd be very keen to know if travel abroad is as difficult as I perceive it to be. If you think I'm barking up the wrong tree, I'd be very interested to hear why.
Do you think that there is a shortage of such opportunities for deaf people?
Is there a demand for such a service in the community?
Would you come?
Am I missing something?
