I promised PFH that I would post this... since he was asking how I was able to maintain a diet of 3,000-5,00 calories daily. Why so much? Backpackers tend to eat that much. I don't drive, I hate taking the bus or taxi because it makes me car-sick. I don't own a bike yet... so I walk everywhere; only motorized vehicles that don't make me sick are rails and boats.
I hike, backpack, fish, run twice a week, go swimming, play rugby and soccer, go rockclimbing...
I keep the grain:protein:vegetable at a 1:1:1 ratio. And when I make food, I do it for a serving of 4 people... all for myself. When I have guests, I double up per guest. I keep forgetting I don't live with my family anymore, so I make too much when I have guests over.
Enjoy.
