I just bought a jar of capers 2 days ago....
and I don't know how that stuff taste
I looked up on website for recipes
and saw this... and I might try it.
Cod with lemon and capers
Original
2 lemons
1 cup (2 sticks) butter
4 (1/2 pound each) cod fillets
1 cup large capers, drained
Modified for diet purpose
2 lemons
4 tablespoons butter
4 (1/2 pound each) cod fillets
1/2 cup large capers, drained
non-stick spray
Spray foil with non-stick spray. Place cod fillets onto foil. Squeeze the juice from one lemon over the fish. Cut the lemon into slices, place over the fish and seal the foil. Place in oven and bake at 350 degrees for about 20 minutes. In the meantime, remove the peel from the second lemon. (Take care to cut only the peel and not the pith.) Cut into 1/4 inch wide strips. Melt the butter in a heavy saucepan over moderate heat. Add lemon peel and capers - saute till crispy. Serve over the fish.
Note: Instead of frying the fish it is baked in foil. The sauce has been cut in half as well. Serve with a large tossed salad and sliced fresh fruit for dessert. Yields significant calorie and fat savings.
