Vegan Meals

In another thread I noticed we have quite a few vegans or former vegans on the board. I mentioned that I am putting 2 days a week aside for meat free days. Well I am out of ideas on recepies to cook. So I figure why not make a thread so we can share some recipies.

I'll go first
Lentils and Rice with Fried Onions
6 tablespoons olive oil (I always use more)
1 large white onion, sliced into rings
1 1/3 cups uncooked green lentils
3/4 cup uncooked long-grain white rice
salt and pepper to taste
Vegetable of choice (mine is green beans)

Fry the onions in the olive oil, cook the rice and lentils seperate, When everything is ready mix it all up exept the onions (olive oil gets mixed in). Onions go on top when served.
It sounds simple but still good eating

Corn Chowder

1 small onion, diced
3-4 ears fresh corn
2 med potatoes, diced
2 carrots, sliced
olive oil
4 cups vegetable stock
2 cups Soy milk

Saute onion in olive oil until transparent. Cut corn from cob and add to oinion along with diced potato and sliced carrot. Saute all together for approximated 5 minutes. Add vegetable stock and simmer until veggies are tender. Add Soy milk and bring just to a boil. Season with salt and pepper to taste.

I make this with regular milk, and add in 1 cup of sharp cheddar cheese at the end. I have a friend that switched from vegetarian to vegan, so I made the changes to accommodate his diet.

Eggplant Parmesan

Peel and slice 1 med sized eggplant into 1/4" rounds. Dip in beaten egg, and then coat with seasoned bread crumbs. Fry in olive oil until goldren brown.

In a 9 x 11" casserole, spread 1/2 cup of Marinara Sauce. Cover with eggplant slices and 1/2 cup grated mozzerella. Cover with more sauce. Repeat layers until all eggplant has been used. Cover with Marinara Sauce, and sprinkle liberally with Parmesan. Bake at 350 degrees until bubbly.

Again, this isn't vegan due to the eggs and cheese, but it is one of my favorite vegetable only suppers.

Vegan mock-parm exists, and you can use egg substitute to help bind the crumbs to the eggplant. vegweb.com has tons of alternate recipes for some-kinda-eggplant-casserole-dish.

Thank you!:ty: I now know how to substitute for my vegan friend. He loved this dish before he went completely vegan, but I'm sorry to say that I am not very well informed on substitutions, so I have not been able to fix a lot of my vegetarian dishes for him since he started his vegan diet.

Awww...thank you,KarissaMann! I wish you were close so I could fix it for you. I enjoy cooking and having people over instead of going out all the time. It is definately cheaper, and usually healthier, too.

I'm the same with food. I use to eat out all the time. Then I had to change to a low sodium diet and started cooking my own meals. Now I always cook at home. Cheaper, healthier and better tasting (IMO). Plus I don't have to deal with the waiters who are too over worked to care about communicating in a way that I can understand them.

The corn chowder looks good.
 
I like this thread. I tried starting one for garden recipes with no luck.

Growing your own vegetables makes them yummier.
 
Home grown tomatoes:drool: I am growing some and peppers to make homemade salsa. Next year I plan to have a full garden. I can't have one this year cause I am selling my house.

It is especially good when the corn is in season around here. (We are within an hour of each other, looks like!) Use fresh corn, make up a nice salad with garden tomatoes, green onions, and fresh basil, and a loaf of sourdough bread, and just chow down!

I have a recipe fow sweet chili sauce that goes back to my grandma. I make it every year with garden tomatoes, and friends beg me for a jar. The only thing I changed is that I add some garden jalepenos that I roast to the recipe. It's a really versatile sauce...can be used for cooking or on the side as a condiment. If you would like the recipe, just drop me a PM.
 
:D :ty: for all the info. on the veggie meals! I LOVE fresh Summer tomatoes and salsa - lotta times I may just eat a tomato like an apple! I've used vegan cheese before - usually soy - when making vegan mac and cheese. Has anyone tried the rice milk cheese?
I don't have a garden but appreciated the thread you had, Steinhauer:)
 
hubby had some lentil loaf once and I was amazed he actually liked it - he is VERY "meat and potatoes" <and cheese> and a very picky eater. But maybe he liked it cuz it happened to be spicy - we both like spice!
 
Ez to make vegan Burrito --

Tortilla, Beans, Rice, Avocado, Lime, Salsa, Onions, Soy Sour Cream (tastes good), Soy Cheese is alright tasting.. but yea..

Cook the beans and rice of your choice and slap all the other ingredients on.

Very tasty.

yup, vegan burrito have that often, like it with hot salsa brown rice and also the non-dairy cheese and sour cream and lots of guacamole. But I am careful cause I've seen couple of the non-dairy soy alternatives do have hydrogenated vegetable oil in them

Yeah. Also a lot of people are misled by Almond Cheese thinking its vegan. It has Casein which is from milk.

The protein in Almond milk won't curdle unless it has other protein in. Just like human milk.
