The 3GS camera uses variable ISO speeds with its sensor, as most digital cameras do, increasing the sensor's gain to capture an image faster at the cost of also increasing noise. In daylight, we found iPhone 3GS runs the sensor from ISO 50 to 200. In the dark, it maxes out ISO 1016, and these images are very grainy.

Yeah it make sense to me. Can you disable auto ISO and use manual ISO?
Real reason why most auto ISO set HIGH during night because it avoid from blurry. So set 100 ISO with tripod is solve the problem.

:aw: There is no camera setting like I said.
 
What your ISO? It looks like over 800 ISO to me. I am not sure if iPhone have 200 ISO or less and it's perfect for night time but it will be blurry if you use your hand.
