Tomato Sweet Onion Macaroni Salad

Here is another recipe creation that was done this week, Tomato Sweet Onion Macaroni Salad, it isn't your usual macaroni salad-- it is much more flavorful and delicious. Check it out!

If you use the yogurt I'd call it healthy, but the regular mayo would kill me:

Real Hellman's Mayo:
Total Fat: 10g (one tablespoon)
Sat Fat: 1.5 (one tablespoon)
Recip requires:1/2
Total Recip fat: 8 (tablespoons) * 10g = 80 grams of fat.
Total Sat fat: 8 (tablespoons) * 1.5g = 12 grams of Sat fat.

I'd probably do Hellmans Light, as a better solution:
Hellman's light:
Total Fat: 4.5g (one tablespoon)
Sat Fat: 0.5 (one tablespoon)
Recip requires:1/2
Total Recip fat: 8 (tablespoons) * 10g = 36 grams of fat.
Total Sat fat: 8 (tablespoons) * 1.5g = 4 grams of Sat fat.

Granted, this is supposed to feed 16 people, but it all depends on what the rest of the meal looks like, if you are having fried chicken or lean top round steak.
 
Not saying it is not good, just that I'd probably tweek it a little.

I never thought of making macaroni salad with yogurt instead of mayo. I'm going to give this a try. Thanks for posting this! :)

PS Now you have me wondering if potato salad could be made with yogurt also. :)
 
Thanks for the heads up on the Mayo nutritional values. I used Greek Yogurt and the recipe came out amazing. As I said in my blog that the recipe was served with sandwiches and/or a green salad. The serving was 1/2 cup. You are probably right the light version mayo is the better choice but I do not like the flavor.

The choice would be yours whichever version you wanted.

I have made potato salad with Fage Greek Yogurt - it is very good but I don't eat a lot of potato or macaroni salad often due to being diabetic. I would be happy to post a recipe on my blog for the potato salad you can try. I also have made a grilled potato salad which is better and healthier.

Pam, thanks for the roasted potato salad recipe. It looks good!

I often eat roasted brocoli, cauliflower and carrots -- that roasted potato salad looks like a nice change of pace.
