I was wondering if anyone has any good recipes that involve beans? I would love to make them more, but my ideas are starting to come to an end!:lol:
 
This is weird, but it is very similar to something my vegetarian daughter made. And it did not taste too bad.

Black Bean Brownies/Cake
Let me tell, guys..I had my doubts when I started "fooling with beans" from the South Beach site..But, I have made 3 things with "beans" and it's incredible that they taste great. Full of fiber..NO FLOUR..carbs are higher, but for those of you who can do "beans", give them a whirl..And CHEAP..

I made this today:

Black Bean Brownies (TRIED AND TRUE)

Phase: 1
Preheat Oven: 350
Cooking Time: 30-40

1 15oz. can of UNSEASONED black beans - drained and rinsed
OR 1 1/4 cup cooked beans of any color
4 eggs (extra large)
1 cup Splenda
3 tbsp. unsweetened cocoa powder
1 tsp. baking powder
2 tbsp. oil or butter
1 Tbs Vanilla (FULL Tablespoon)
1/2 tsp baking soda
1/4 cup ricotta cheese or cream cheese

For extra chocolatey goodness:
2 ounces of unsweetened chocolate, melted with
2 Tbs. oil/butter in the micro..
Add a couple of Tbs. of splenda..

Then mix this in the batter right before you spread it in the pan.

chopped nuts - optional (I used chopped walnuts)

Preheat oven to 350 degrees. Mix all ingredients in a food processor or blender- blend very, very well. At this point, I decided it needed more chocolate flavor so I did the addition above, then mixed it in.

Pour into an 8x8 baking pan sprayed with cooking spray or oiled with canola or olive oil. Bake for 30-40 minutes. (til toothpick pulls out clean).

Mine took 30 minutes..

Mine is simple and well-taste

Black Eye-Pea
• chopped red onion
• half liter of chicken broth
• a bag of black eye-pea (dry prefer, not canned)
• sliced square honey ham
 
You know in Asia, they use azuki beans or red beans to make desserts?

They got a chocolate-like flavour to them.

Yes, my husband has been cooking Asian and Indian foods for many years. We have a large variety in our cupboards.

One of his friends family owns a large Asian grocery. :)

200g Azuki Beans - (Red Beans) (7 oz)
700ml Water (3 u.s. cup)
(250g Cooked Beans (9 oz) for Bean Paste)

120g Sugar for Zenzai (4 oz)
70g Sugar for Red Bean Paste (2 1/2 oz)
A Little Bit of Salt
A Little Bit of Matcha - Powdered Green Tea

12 Tofu Dango Balls

Quinoa with Black Beans and Cilantro
From Bon Appétit Sept 2008

1 T oil
2 c chopped white onions
1 c chopped red bell pepper
1 c quinoa, rinsed, drained
2 tsp chili powder
1/2 tsp ground cumin
1/2 tsp salt
1 1/2 c water
1 15-oz can black beans, rinsed, drained
1/2 c chopped fresh cilantro, divided
Crumbled Cotija or feta cheese (optional, but recommended)

Heat oil in a medium saucepan over medium-high heat. Add onions and red
pepper; saute for a few minutes until they begin to soften. Stir in quinoa,
chili powder, cumin, & salt; add water and bring to a boil. Cover, reduce
heat to medium-low, and simmer until quinoa is almost tender, about 14
minutes. Add beans and 1/4 c cilantro. Stir and cook, uncovered, until
heated through and liquid is absorbed, about 2-3 minutes.

Transfer to a bowl and sprinkle with remaining cilantro and cheese. Makes
about 4 main dish or 6 side dish servings.
 
Another good one:

Quinoa with Black Beans, Corn & Chipotle Pepper, Lime & Honey Dressing

1 cup quinoa
2 cups water
2 tbsp fresh lime juice
2 tsp honey
1 tsp ground cumin
1 tsp seeded & minced chipotle peppers (sold in cans as chipotle peppers in
adobo sauce)
1/4 tsp kosher salt
1/4 cup plus 1 tbsp extra-virgin olive oil
1/2 cup cooked black beans
1/2 cup fresh or frozen (defrosted) corn kernels
1/4 cup chopped fresh cilantro

Combine quinoa and water in medium saucepan set over high heat. Once the
water boils, cover and reduce the heat to low. Cook until all of the water
is absorbed, 15 to 20 minutes. Fluff with a fork and transfer to a serving
bowl.

In a small bowl, whisk together honey, lime juice, ground cumin, salt, and
chipotle pepper. While whisking constantly, slowly add 1/4 cup plus 1
tablespoon extra-virgin olive oil to the chipotle mixture to form a
dressing. Set aside.

Stir black beans and corn kernels into the quinoa. Add the chipotle
dressing to the quinoa and gently toss to combine. Stir in cilantro. Serve.

Serves 4 to 6 as a side dish or 3 to 4 as an entree.
 
souggy, I didn't know that about the beans. I enjoy Azukis.
I would like to try some more Ethiopian food...
and I do love quinoa

I just made veggie burgers out of chickpeas.

The recipe follows as..

1 can of chick peas (wash out the chick peas really well)

1 minced garlic

2 chopped green onions

1 tbsp olive oil (your preference of oil)

salt and pepper (for flavour)

1 shredded carrot

1 diced pepper (I used yellow for colour)

1 tsp chili seasoning

Pulse the chick peas using food processor or use a potato masher.

Add olive oil, salt & pepper, chili seasoning, shredded carrot, diced pepper and onion to the chick peas. Mix with your bare and clean hands.

Put in a separate container in fridge for an hour to allow the flavour to mesh.

Yields 4 veggie burgers.

after they set in the fridge for while, then do you need to saute them or anything or are they considered "ready"?
 
Hi dogmom, you can either fry them with a bit of oil for 3 minutes on each side until they are golden brown or put them in the oven for 10 minutes at 350 C.

It is very delicious and healthy. No after-gas feeling too because the beans have been washed out in cold water for at least 5 minutes.
