SWEET POTATO SOUFFLE
3 c. mashed sweet potatoes (3 or 4 big potatoes), can use canned sweet potatoes
3/4 c. sugar
1/2 c. milk
2 eggs
1/2 tsp. salt
1 tsp. vanilla
1 tsp. cinnamon
TOPPING:
1/2 c. flour
1 c. brown sugar
1 c. chopped pecans
1/2 stick butter, melted
Beat all ingredients together with mixer until soupy. Pour into 1 1/2 quart buttered casserole dish. Mix and spread topping over potatoes. Bake uncovered at 350 degrees or until topping is almost hard.
