Eggplants, like it?

I like eggplant but have mostly had it steamed as part of a veggie medley or occasionally as part of stir fry.

Eggplant....yuk!...My mother loved it and cooked it often...."stuffed eggplant"...won't touch it with a 10-foot pole!

I make a killer stuffed eggplant. saw it on one of Emril's tv spots. changed it a bit more to my liking and it is a great dish...
