Chipotle Shrimp & Pineapple Kabobs
Prep: 15 mins Cook: 8 mins Ready in: 23 mins
Ingredients:
1 cup Lawry's(R) Baja Chipotle Marinade With Lime Juice, divided
1 1/2 pounds uncooked large shrimp (21 - 25 per pound), peeled and deveined
1 (16 ounce) can pineapple chunks in natural juice, drained or fresh pineapple chunks
1 medium red onion, cut into chunks
2 bell peppers, cut into chunks
Cooking Instructions:
In Ziploc(R) bag, combine 3/4 cup Marinade and shrimp. Marinate in refrigerator for 30 minutes.
Remove shrimp; discard used marinade. On skewers, alternate shrimp with pineapple, onions and peppers. Grill kabobs over medium heat, brushing with remaining Marinade, until shrimp just turn pink, about 4 minutes per side.
