Actually what causes the "brainfreeze" is that the roof of your mouth do have nerves, so when something cold (and a lot of it) touches the roof of the mouth, you experience a rush of an "headache" -- that's why it tends to happen more when you glup it all up or take HUGE bites of ice cream...
