Scrambled Zucchini Eggs Recipe

This recipe goes really well with the Simple Red Roasted Potatoes. The two recipes are linked together so you can see them as you read through the recipe itself. Loved the flavors of the freshly grated Zucchini and Parmesan cheese. I was so surprised that the eggs tasted really good with the other ingredients.
