That's true. My reason for limiting meats has to do with both my cholestrol count and my kidney disease. I will admit that I may need to limit the amount of protein (meat and beans) that I eat down the road if I don't take care of myself. I just didn't feel the need to disclose the reason why at first.

I think increased intake meat especially high fat meats is part if not all of the reason behind the rising count of obesity. Also, we are much more sedentary than we were 110 years ago before the advent of cars and that is likely a big factor in the rising obesity around the world. Refined sugar doesn't help any either. Even 60 years ago, people didn't eat a whole a lot of meat so last week I surfed the Net for old recipes to get ideas of how people ate but I think I would be better off looking thru old cookbooks books at my library since people seems to be biased toward meat laden recipes on the internet.

Well, yes, but I was thinking of places like Siberia where there are no grains or vegetables, and they are still virtually non-existent today. They are usually quite slim; until recently with the introduction of pre-packaged food and beverages. That in itself is really particular.

Well, you already established you are diabetic. Diabetes is hard on the kidneys, and the kidneys' job is to filter excess protein and toxins-- assuming there's nothing else inteferring with it. I don't think people realize how compromised diabetic people are, so they may not think about it. The rest... is confidential, no?

As far as recipe-books, they are merely reflection of the person's economic status. Meat for the most was historically was only made available to elites in agrarian societies up until factory-farming made it accessible to everyone.

However for people who live in hunter-gatherer societies, the opposite is true: dried grains and legumes are things to be hoarded since if you can afford to keep them securely, since they usually have to be imported, then you are blessed with being able to leisurely see the next season.

I read about that - how traditional and subsistance diets have gotten more influenced by Western/processed food, in areas like traditional Inuit land where the kids in particular have more access to things like tv and pre-packaged items have become more available.

That's quite correct. If i recall correctly, King Henry the 8 became very obese.. Queen Anne was said to be obese in her later years. she was so swollen with dropsy that her coffen was as wide as she was tall. Nowadays, dropsy would be called edema due to heart failure though other causes could be possible. Swelling and edema is quite common among the very obese btw.

Haha! Pickled beets is one of my most favourite things to eat in the world - so funny to see how it colours your pee.

Just thought I would share with you, since it was the original intent of this thread.

Today, we had Black beans and rice for lunch. I use the recipe off the can of Goya brand black beans. For dinner tonight I am making a potato soup. Here's what I plan and I will tell you of the results after we have it.

Boil 4 peeled and cut carrots and 1/2 head cauliflower florets in lightly salted water. Drain, but keep the hot water. Puree the carrots and cauliflower. Peel and chop 1-2 pounds potatoes. (I will be using red as they were in my budget, but Yukon Gold would be better). Add the potatoes to the hot water and boil until tender. Save 1-2 cups of the potato and drain and mash the rest with some butter (dairy free for me) and rice milk. Add the pureed carrots and cauliflower to the mashed potatoes. Add more milk and some water to make a thick soup. Meanwhile, in a non-stick skillet, place 1 medium chopped onion and 1/2 package of Soyrizo (soy chorizo) or soy sausage and cook till done. Add the "meat" and onions to the soup and give a good stir.

We will have crackers with either butter or my Tofutti cream cheese.

Fresh beets are so good. My father grew his own vegetables for years and it was my stepmom who pickled the beets. They were like candy for me!

Went to a farmer's market this weekend, it was so wonderful to see all those wonderful colours, baskets and baskets of fresh fruits and veggies, and the smell was heavenly! which reminds me, how come one can never smell the fruits and veggies in grocery stores? It's weird.

yeah it does funny stuff to pee with certain foods. I love asparagus!

That's one of the things I really like about the farmer's market, to see all the fresh and local produce
and I like to see the farmer's and growers face-to-face and proud of what the have to offer.

I thought it was good, son had to add more salt, hubby thought it was too spicy, mother liked it and daughter did not eat hers. I didn't figure she would. She will make a peanut butter and honey wrap later.

I love that too and also seeing strange new veggies or seeing the same veggies but in different colours and shapes. Was at the farmer's market when hurricane irene swept by my city - it was pouring rain out, the winds were crazy, the streets were flooded and we all stood under plastic tarps having a great time sampling and buying produce from the farmers on the sidewalks. Even in such terrible weather, the sight of the produce would make anyone smile - so colourful and bountiful!

look up rimguard. Its a bio-freindly product for liquid ballast for tractor tires. Many tractor owners needs extra weight for better traction pulling power like mine. Not too long ago many farmers were using calcuium chloride (salt water) but it would eat the metal rims and require tubes and its a mess when leaking. it also kills the plants.
rimguard extracted the juice from beets and use that instead of calcuim chloride. Beet juice doesnt freeze in normal north american weather, doesnt harm the plants, doesnt eat metal.

So- in my book, beets doesnt belong on my table (I hate beets) but belongs in the tires.

I like trying out all kind of foods even some strange stuff (to others) like tofu. I'm thinking the next time I go grocery shopping I will see if the local health food shop has fresh tofu. I tried tempeh earlier this year but I have decided that I'm not wild about it. When I went to the store earlier this year i found out they had black garlic so I bought it of course.

We had borscht a lot growing up . My mom would have pink fingers for days!
We would sour cream in with it and have Russia black rye bread, which is nothing like the kind you get today! The bread today is awful compare to when I was a kid!
