Here's another really easy breakfast casserole.

Quote:
EASY BREAKFAST CASSEROLE

1 lb. sausage, bacon or ham
3/4 c. sharp cheddar cheese
1/2 c. mushrooms & pieces
5 eggs
1 3/4 c. milk
6-8 slices of bread (cubed)

Place cubed bread in casserole dish, put cooked sausage, bacon or ham on top. Add sharp cheese, mushrooms on top of meat.

Beat eggs, milk, salt and pepper, pour over top.

Let stand 5 minutes then bake at 350 until brown (35 minutes).

Aw *blushes* Thanks!

Botts - thanks for the recipe! I should give that a try.

For those who loves green tomatoes - There is a green tomato casserole that a family friend gave to me and it is so good.

Here's the recipe --

4 to 5 Green Tomatoes
chopped green onions
shredded cheddar cheese
2 tlbs. butter
ritz crackers
lemon pepper
salt

Melt butter in 8X8 pan. Slice tomatoes and arrange in pan, put chopped green onions on tomatoes, Sprinkle with salt, and lemon pepper. cover with shredded cheddar cheese, crackers and then dot with butter.

Bake on 400 for 40 minutes covered, uncover and cook for 10 minutes longer uncovered.

You can make this easily fit to how much you want....for me, I just used 3 tomatoes and a smaller glass dish to bake it in.

I have a recipe for Hungarian Spinach Bake and I love to make my mock chicken caccitorie (can never spell that right)

Our family is also good for having Mom's throw-together. Start with ground meat (beef or turkey) diced onion and garlic. Then decide whether to have tomato based or creamy based and add either canned tomatoes (pureed) or a cream soup not diluted. Seasonings and some kind of frozen veggies. Cook till done, then cover with shredded cheese and service with either Bisquick Garlic Cheese biscuits or French or cuban or italian bread with soft butter.

I am definately going to try this, Jolie! It sounds delicious! I froze several bags of green tomato slices this summer for frying this winter, but I have to try this casserole instead. The only way I have ever done green tomatoes is fried or made into pickles.
