Red face people with dibetic food(Eggplant Lasagna)

Eggplant Lasagna

If you are dieabetic,, my mom use this recipe for people who are dieabetic.

Ingredients - serves 4:

1 tablespoon olive oil
1 medium onion, sliced
1 clove garlic, minced
1 large tomato, sliced very thin
1 cup canned crushed tomatoes
1 1/2 teaspoons dried basil
1 1/2 teaspoons dried oregano
1/4 teaspoon. salt (optional)
1 medium eggplant, sliced very thin
8 ounces shredded part-skim mozzarella cheese

Procedure:

Preheat oven to 425°F.
In a medium nonstick skillet, heat olive oil over medium heat. Sauté onion until tender, about 2-3 minutes. Transfer to an 8x8 or 9x13 baking dish.
Sauté the garlic for 1 minute. Add the crushed tomato, basil, oregano, and salt, and cook gently over medium-low heat for 10 minutes.
Spread a layer of this mixture over the onion layer.
Add a layer of eggplant and follow with a layer of tomato.
Sprinkle 1/3 of the mozzarella cheese over top.
Repeat layers of eggplant, tomato, and cheese until you use all ingredients. Finish with a layer of mozzarella cheese.
Cover with aluminum foil and bake for 25 minutes, or until vegetables are tender.
Uncover and bake 10-15 minutes, or until layer of cheese is light brown.

1 slice lasagna (1 cup)

Oh this sounds so good but my husband does not like eggplant, lol.
This reminds of a funny story when he was in the Marines..he was in
the chow line and he spotted what he thought was potatoe patties, so
he picked up a couple of them, well, it turned out to be eggplant patties!
He nearly gagged on them so he tried to hide them in the napkins but no
such luck, the Sargent saw him doing that, so he said.....what the ##*+&%^ are you doing with them eggplant patties, boy??...Mike said..oh uhhhh
i dont like them...the Sargent said, well that is just too blank blank bad, you
chose them so you have to eat them!! oh poooor Mike had to eat the
whole 2 pieces of eggplant patties!! LOL!

LOL,,,, aww poor your husband lol I guess being in the marines get bad food lol.. my dad was in the army and he told me that he hated their food and I guess I can't blame them for lousy cooking. lol But u can check out "portellbella Mushroom pizza " is very very healthy no sugar and no fat and my love it. It should be here under Food and drinks. :-)

I love eggplant. I baked eggplant lasagna once but my hubby & both sons don't like it...

I ate eggplant lasagna in canteen at work place.

YOu should try french fries eggplants is great,, You just take the skin off the eggplants and cut up like big fries stick and dip in egg mix and use itailan bread crumbs and fry it in olive oil and it done. It soft but taste great!
