Homemade chicken and okra gumbo, mixed greens, cornbread, rice, potato salad and iced tea. Chocolate cake with raspberry filling that was bought at the market. It was family dinner night. All the kids and their significants come over one night a week. It was fun. (would have been better with Reeses pie)

It's going to be a rather spare dish tonight. Cucumber/tomatoes/mozarella salad with eggs and fried camembert with cranberries - YUM

I've got some baby back ribs cooking in the crock pot right now. They'll be really tender. I have a big crock pot so I can cook a couple of racks at once. YUM!

Tonight I am going to make a McDonald's equivalent in my very own kitchen. I have a tiny iron skillet that will make a bun sized egg. I am going to use that, and toast one of those very thin sandwich buns, then top with swiss cheese and ham.
Milk and juice to round the meal out.

May I suggest, chicken pot pie to start, asparagus quiche as your vegetable, and for a health fruit filled dessert raspberry pie?
Then later for a snack go to Dairy Queen and have a French Silk Pie Blizzard. That should take care of your pie interests for a while?

We had fish & chips....I know it's Sunday, but all day long was moving furniture from the storage into the house, and part of my pit group living room suite must have weighted 400 lbs.! (MY back)! Had to do a lot of re-arranging furniture to get it to fit the small living room.
Oh yeah, we had pork & beans too, compliments of my 13 yr. old! |

To Rockin Robin: It was good. Its a very old family recipe for the gumbo. I make good and easy cornbread. I wish I had leftover bread, but alas, no. I am old, I like to crumble the cornbread in "sweet" milk and eat it for snacks. Ha! How country can you get? Sure is good, too. For those who dont know, sweet milk is simply milk that hasnt soured, as in fresh milk. |

Plov rice again...
1 cup of uncooked rice... boil... once done... set it aside While rice is boiling, add a lot of oil (or butter) to frying pan, add chopped onion (1 whole large). Once the onions are golden brown, add grated carrots (about 2 or 3 large carrots). Once the carrots has oftened up, add a few large chopped mushrooms. Once the mushrooms have shrivelled up, add the rice to the frying pan and fry for two minutes. Once the rice is done frying, feel free to add any spices and herbs... mix it up and then serve. Added green onions to this recipe. No chili peppers or lamb this time. Also had a side of roundeye steak and grilled asparagus to go with it. And yes... it is how you prepare Chinese fried rice, only difference is that the rice doesn't have a chance to cool down... so it's a bit more "mushy" than the East Asian style... so it gives a different texture.

You can make like this:
INGREDIENTS (Nutrition) 1 1/2 pounds ground turkey 1 bunch green onions, chopped 1 (1.25 ounce) package taco seasoning mix 2 cups water 1 (14.5 ounce) can diced tomatoes, undrained 1 (4 ounce) can diced green chile peppers, undrained 1 (15 ounce) container ricotta cheese 2 eggs 8 (10 inch) flour tortillas 1 (8 ounce) container sour cream 1/4 cup salsa DIRECTIONS Preheat oven to 400 degrees F (200 degrees C). Place ground turkey in a large, deep skillet. Cook over medium high heat until evenly brown. Stir in green onions, taco seasoning mix, water, diced tomatoes with juice, and green chiles with juice. Reduce heat to medium. In a medium bowl, mix together ricotta and eggs. Place 2 tortillas in the bottom of a 9x13 inch pan. Spread 1/4 of the ricotta mixture on tortillas. Spoon 1/4 of the meat mixture over the cheese. Repeat layers until all is used up. Bake in preheated oven for 20 minutes, or until sauce is bubbly. In a small bowl, mix together sour cream and salsa. Serve in a bowl on the side. It's easy. Enjoy!
