Enchilada pie- it's kind of like a layered quesedilla- tortilla in a pie pan, spread iwth a meat and bean mixture, top with cheese, then another tortilla, then more meat and cheese, then another tortilla.
Or maybe it's like Mexican Lasagna.=)

Roasted cauliflower
salad.

Korean cucumber kimchi, cooked with tofu and bean sprouts. Eaten with jasmine rice. It was so good.

Tonight I will be making soft tacos with my MorningStar Farms Chik'n Strips, mashed navy beans, pico de gallo and either sour cream (Tofutti brand) or cream cheese (Tofutti brand). We also have chips and the family will have the bean, salsa and cheese dip, and I will have garlic & spinach hummus.

pasta, with chicken and sauce made with veggies (garlic, onion, carrot, pepper, marsala wine, chicken broth, lemon juice). It was yummy and light.

Tonight we got dinner from Boston Market. I got them to put together a meal for me that was 3 orders of fresh steamed vegetables and 2 orders of their cinnamon apples. They were the only 2 things on their menu that is non-dairy and also no meat.

I made a fairly healthy salad with lettuce, apples, dried cranberries, bacon, and bleu cheese. I also made cornbread muffins, and had cranberry/apple juice to drink.

Ordered Pizza my/daughter side was cheese and mushrooms. Was not really in the mood for it like my cooking much better.Had a Migraine so did not feel like cooking.

Soft tacos and re-fried beans. Was making Grilled Chicken with Garlic Mashed potatoes and Salad. However I think my Hamilton Beach Grill finally needs to be replaced. Burned the outside before the inside was done and no it was not up high the setting was just below medium. Had it for 10 years and used it a lot.

Mother didn't pull enough chicken from the freezer to thaw, so we had to order out. MIL bought Boston Market chicken for all 6 of us. I ordered the 3 piece dark meat with fresh steamed vegetables and cinnamon apples. Kids got my chicken and I heated up some leftover beans.

Took the boys and their friends to CiCi's for Pizza/salad/pasta.....Marcus set a "record" for himself, eating 32 pieces of Pizza (and he's still skinny as a board).....I ate 2 pieces...uggg! tasted like cardboard and quoted "this sure ain't Domino's"....so ate a salad, even that was "ho hum"....

Family had BBQ'd chicken breast tenders, I had Tofurky kielbasa, then we all had pasta shells and corn.

It's pulled out of the freezer now and I will start cooking in 2 1/2 hours. At least by then I can separate the chops and cook them.
