Well - the fish now gets to be thrown out. MIL felt like getting burgers for everyone, so they are all at Burger King and will bring me back a sandwich. I have done so many errands today I can't walk.

All the holiday food is sadly gone. Boo. So, with the last bits of ham and lovely mashed potatoes I made a potato pancake of sorts. It tasted like crispy rounds of ham and potato casserole. (lick!) We served this with collard greens. Oh my goodness, we are rolling in Southern Fried happiness. lol

Adapted a recipe I got online. Basically it was a casserole. Soyrizo, diced onion (1/2 large), mushrooms (1 small can stems & pieces), dried basil and oregano (1 teaspoon each) and I used a little (2 tablespoons) red wine vinaigrette in place of red wine.
