Matt confronts Ben in the living area. The girls don’t know why Matt wants to be part of their team, and they already want him gone.
The next day, Matt lines up with the Red team. Ben tells Chef that the men’s team won’t be missing Matt. Chef has cooked three dishes for the teams. He wants to see if they know what the missing ingredient is from each. Everyone dives in, but no one can figure out that he prepared them without a meat product. He only used soy-based replacements. Chef Ramsay is stunned that none of them were able to use their palettes to find the fake meat.
The teams move to the dinning area for a blind taste test. Each must identify three items and the team with the most will win. The women are running away with the competition, five to one. The final competitors are the rivals, Matt and Ben. Ramsay changes the challenge. He has prepared a dish with ten ingredients, and they must alternate naming all ingredients. Matt matches Ben, ingredient for ingredient. Yet Ben falters and Matt wins the challenge for the Red team. Chef sends the Blue team off to clean the dorm rooms. The women and Matt go get massages.
During the cleaning, Ben has to take ice teas to the Red team. He is furious that he has to serve Matt.
The teams head into the dinner service, and Matt is the focus of everyone’s attention. Chef Ramsay calls the teams around before the opening and challenges the Blue team to step it up. He also announces that there won’t be anymore theme nights at Hell’s Kitchen. It’s time for Jean-Phillipe to let the customers in.
The seventh dinner service begins, and the teams feel like they have a lot to prove. Rosann swears that she will stay focused. Yet from the start, she fumbles on the scallops. Rosann is still able to get the order out before Bobby and Louross can get theirs completed.
The Red team starts their entrée orders. Jen gets upset and shuts down when Chef snaps at her for trying to take control of the kitchen. On the Blue team, Louross impresses Chef Ramsay with a great-looking salad.
Rosann continues to fumble the scallop station. Chef calls the Red team around. He tells Jen to step up, and yells at Rosann over the quality of her scallops. The Red kitchen is losing momentum.
Chef Ramsay moves on to attack the men, accusing them of falling apart and not communicating. When Ben tells Chef that he isn’t used to this system, Chef explodes. He says that Ben always has a weak excuse for his poor work.
Two hours in and Chef Ramsay is losing patience with the Blue kitchen because they can’t work together. In the Red kitchen, Ramsay compliments Christina on the quality of her beef orders. By then, more than half of Red tables have received their entrees. The customers on the Blue side have yet to receive any food.
Chef preps a dish of risotto cooked by Matt. Chef compliments him and Matt is thrilled.
Chef Ramsay busts Ben on not having any of the entrees prepared. Ben makes the mistake of letting Chef hear that there is no lamb ready. The Blue team is in shambles and their service is embarrassing.
Rosann slips up serving raw meat. Then Jen gets on Chef’s bad side by mouthing off to him while he gives orders. Rosann isn’t sure that she should stay after this round of Hell’s Kitchen.
Service stalls in both kitchens and orders are being returned to the Blue team. Matt is thoroughly amused when he hears Chef yelling at Ben. Chef Ramsay has had enough of the poor service and he shuts down both kitchens.
Afterwards, Chef calls the teams overconfident, lazy, slow and pathetic. He surprises everyone by announcing that Matt was the star of both kitchens. The losers are the Blue team. He sends them all back to the dorms and demands that the men’s team individually nominate one person.
Ben tries to get the guys to each nominate themselves. When Louross refuses, Ben has to switch gears. He then goes after Petrozza to nominate Louross, but Petrozza doesn’t know what to do.
Back in the dinning room, Louross nominates Ben. Ben nominates Louross, and Bobby nominates Petrozza. Petrozza nominates… himself! Chef Ramsay tells Petrozza that he is by far the most mature and gracious person on the Blue team. Chef makes his choice. Ben will leave Hell’s Kitchen. Matt couldn’t be happier.
Ramsay wants the chefs to forget everything and move on. It’s time for the Blue team to shine. Since the teams are now unbalanced with three men and five women, Chef Ramsay announces to the Red team that someone will need to go to the Blue team.
