The one thing that scares me about this story is that restaurants do not always follow the rules. If you recall, there was a recent thread and news story about an employee who lost part of his finger in an Arby's burger. This is not the famous Wendy's hoax, but a true story where the employee lost part of this finger, bandaged it up and continued working.

Had this person had AIDS or any other infectious disease, it could have contaminated the food. Whether its right or wrong, imagine the fallout if an employee with AIDS cut themselves at work....I could easily see that business going under...look at what happened to Wendy's even though they said they couldn't find where the finger came from and thought it was a hoax (later proved to be a hoax). People stopped eating there. If that rumor had been an employee with AIDS spilled blood, nobody would eat that those chains and many would probably ask what a person with AIDS was doing working in a food enviroment.
